Grone's German Potato Salad

Category: Copy Cat Recipes (I have not tried all of these recipes)


Yield: 16 servings

4 pounds russet potatoes

1/2 pound thick-sliced bacon, cut into 1/4-inch pieces

1/2 cup white vinegar

1/2 cup water

1/2 cup granulated sugar

2 tablespoons chopped onion

2 tablespoons diced green bell pepper

2 tablespoons diced celery

1/2 teaspoon salt or to taste

1 teaspoon freshly ground black pepper or to taste

1. Wash potatoes. Place in a pot of boiling water and cook until tender, 25 to 40 minutes. Drain and set aside.

2. Meanwhile, cook bacon in a skillet over medium-high heat until crisp. Remove bacon with a slotted spoon and place in a medium pot. Discard all but 1 tablespoon bacon grease.

3. Add vinegar, water and sugar to pot holding the bacon; bring to a boil. Turn off heat and allow to cool.

4. When potatoes are cool enough to handle but still warm, peel and slice 1/8-inch-thick into a large bowl. Add onion, green pepper and celery. Pour vinegar mixture over the potatoes and vegetables, season with salt and pepper and toss gently to coat. Serve warm.
