Feasting Fox Chicken Salad

Category: Copy Cat Recipes (I have not tried all of these recipes)

Yield: 4 servings

1 pound skinless, boneless, chicken breasts

1/2 cup real mayonnaise

1/4 cup finely diced celery

1 tablespoon finely diced red onion

Salt

Ground pepper

Sliced grapes,
Dried cranberries,
Dried cherries,
Toasted nuts,

1. Preheat the oven to 350 degrees. Place chicken on a baking sheet; bake until chicken is fully cooked and juices run clear, about 25 minutes. Cool to room temperature. Finely dice cooked chicken.

2. In a large bowl, combine chicken, mayonnaise, celery and onion. Season with salt and pepper to taste. Stir in grapes, dried cranberries, dried cherries and nuts to taste, if using.


Variations: Chicken salad appears in many renditions at the Feasting Fox, sometimes on croissants for sandwiches at events held at an adjoining banquet facility called the Gretchen Inn, sometimes in puff pastry, sometimes on a salad plate.
