3 tablespoon oil or olive oil
2 tablespoons grated peeled fresh ginger*
2 tablespoons rice wine vinegar**
1 tablespoon orange marmalade
1 tablespoon Dijon mustard
1 teaspoon sesame seed oil***
1/4 teaspoon salt
1/4 teaspoon black pepper
Whisk together until well blended.
Good on a salad made of
1 red bell pepper, thinly sliced into 1 inch pcs
1/2 large head of napa cabbage(about 1/2 lb)
cored and thinly sliced crossways.
1/4 cup fresh cilantro leaves chopped
1/2 cup chopped cocktail peanuts
*When I grate ginger, I cut it into small knob and peel with vegetable peeler and grate it on grater. Wrap what is left and store in freezer.
** My favorite brand of Rice Vinegar is Nakano
***I always use Spectrum toasted sesame seed oil and the difference in the taste is worth the extra money it costs.
