Ricotta Cookies

1/2 pound unsalted butter at room temperature
2 c. sugar
2 eggs
1 container ricotta (475g)
1/2 tsp. baking soda
2 tsp. baking powder
2 tsp. vanilla extract
3 to 4 c. flour

Directions:

In blender, mix butter and sugar. Add eggs and ricotta. Add baking soda, baking powder and vanilla. With wooden spoon, add flour. Texture should be cookie like. Drop cookies on baking sheet and bake for 10 minutes at 350 degrees. After they are baked, brush on glaze.

Glaze

2 to 3 c. powdered sugar
Less than 1/4 c. milk
Zest of 1 lemon

Directions

Combine ingredients. Texture should be pasty. Brush on cookies
