Corned Beef

Ingredients

5 pounds of corned beef (round is good)
1 onion
4 whole cloves
6 peppercorns
1 bay leaf
2 peeled cloved of garlic
1/2 teaspoon dried rosemary
2 slices (rings) of green pepper
1 stalk of celery
1 peeled carrot

Rinse the beef and place in large pot.
Cover with cold water.
Add the rest of the ingredients and bring to a boil.
(Some scum will be on top of water so remove all of this you can.)
Cover and simmer for 4 to 5 hours until fork tender.
Remove and let meat rest for a few minutes.
Slice and serve with horseradish sauce or mustard.
