s Using a spiral vegetable slicer, cut two medium zucchinis into long, thin strands. Then, cut through the noodles with kitchen scissors.
In a large skillet, heat two tablespoons of walnut oil over, medium high heat.
Add six cloves, of smashed and halved garlic.
Cook and stir until the garlic just begins to brown.
Next, add the zucchini to the skillet
Cook and toss for one minute, then transfer to the serving bowl.
Add a half cup of walnuts to the skillet.
Cook until just toasted. Then add them to the zucchini.
Add a half teaspoon kosher salt, and a quarter teaspoon crushed red pepper.
Toss the mixture to coat, then set aside.
Next, heat one tablespoon walnut oil in a skillet. Add four slices of torn bacon, and cook until crisp.
Add the bacon to the zucchini mixtured along with green apples and toss. Top with goat cheese before serving.
