Scones With Strawberry Jam and Whipped Cream

When I lived in Australia, I went with my neighbor up Mount Dandenong to cute little tea shop and this was the first time I had these.

3 cups of all-purpose flour
1/2 cup of fine white sugar
5 teaspoons of baking powder
1/2 teaspoon of salt
3/4 cup of soft butter cut into small cubes
1 medium-sized egg
1 cup of milk
Strawberry jam and whipped cream for serving


Preparation:


1Sift the flour, sugar, salt and baking powder into a large bowl and add the small cubes of butter. Now, with your fingers rub the butter into the dry ingredients until you develop a crumb-like consistency and there is no butter left unincorporated.
2 Beat the egg and add it to the milk, making sure to mix the two together. Next pour the egg and milk into the crumbed dry ingredients and mix them together with a spatula or your hands until you have a firm dough. You can also add dried fruit at this point if you wish too.
3 Turn your scone dough out onto a lightly floured surface and use a rolling pin, which should also be floured, to roll out the scones. Once you have rolled the dough to about 1/2 inch thick use a round cookie cutter to cut out your scones. (Press down with the cutter and then twist it slightly as you cut, this will help the scones rise more evenly) Place your round scones onto a slightly buttered baking sheet.
4 Cook the scones in a pre-heated 400 degree Fahrenheit oven for around 15 minutes or until they are golden brown. Once they are cooked allow them to cool slightly before splitting them lengthwise and serving them with a spreading of strawberry jam and a little whipped cream.
