Creole Grits And Cheese Casserole

- 4 cups hot, cooked grits
- 1/2 cup finely chopped onion
- 1/4 cup finely chopped green onion
- 1 teaspoon Creole seasoning
- 1 egg, beaten
- 2 cups grated cheddar cheese, divided
- 2 tablespoons chopped fresh parsley
Preheat the oven to 350 degrees F. Grease a baking dish. Combine the cooked grits with the onion, green onion, creole seasoning, beaten egg, and half of the cheese. Mix well and pour into the baking dish. Top the grits with the remaining cheese and the chopped parsley. Place in the oven and bake at 350 degrees F for 30-45 minutes or until the cheese is melted and the casserole is heated through. Serve hot.
