Delicious side dish - I serve with broiled or boiled shrimp and fresh baked bread - yummy.

5 medium baking potatoes
1 cup of finely chopped scallions (other onions are okay but not as good)
1 cup of freshly ground parmasan cheese (the kind from your dairy section)
1 tablespoon minced garlic
6 tablespoons butter or margarine

boil potatoes til soft but not mushy (so they still hold their shape)

while potatoes are boiling, chop your scallions finely and sautee in 3 tablespoons butter till soft, stir in garlic and set aside

remove potatoes from water, cool under running water and slice

add three tablespoons of butter to the scallion mixture, add potatoes turning to coat with butter then (if pan is oven safe) remove from heat, sprinkle with cheese and bake -at-350 degrees til cheese melts (about 5 minutes)- if pan is not oven safe, pour mixture into oven safe pan first.

Make four servings
