I realize my grandmother did not create this recipe, but it is an old classic that she served at almost every holiday or family get-together and church dinners, winter or summer. It was always well-received, and even kids will eat these veggies.
Maw Maw's Three Bean Salad
1 can green beans
1 can kidney beans
1 can yellow (wax) beans
1 1/2 cups salad oil
3/4 cup sugar
2/3 cup cider vinegar
1 medium onion, chopped
1 bell pepper, chopped
1 small jar chopped pimentos
1 tsp salt
Drain all beans and rinse thoroughly. The rinsing removes most if not all of the canned taste. Add onion, bell pepper, and pimento and mix well. Make a dressing of the oil, vinegar, sugar, and salt. Pour over the salad and marinade overnight in the fridge. Serve chilled.
