Easy Microwave Mexican Rice

2 cups uncooked white rice

3 cups water (add more if it becomes too dry while cooking)

3 bullion cubes (beef or tomato are best)

1 cup mild picante sauce or salsa

1 Tbsp. butter

Place in covered dish and microwave on HI for 20-25 minutes, or until completely tender. Let rest 5 minutes and stir before serving.

This makes about 4 cups cooked rice. Serves about 8.
