Sweet Pumpkin Soup

Serves 6 - 8

About 4 cups cooked mashed pumpkin
1 pint heavy cream
2 Tablespoons butter
1/2 - 1 cup brown sugar (depending on how sweet you like it)
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
Pinch ground nutmeg (optional)
Pinch salt
Semi-sweet white wine, such as Spatlese or even a Spumanti (see options)

Place everything but the wine in a pot and heat together on low-medium heat, stirring to prevent sticking. It should be kind of thick. When hot, add 1/2 to 1 cup wine (You may use milk, white grape juice, or water if you prefer) and cook at least ten minutes more, stirring occasionally. Serve warm with buttered bread - French Bread or even Pumpkin Bread are good choices. Top with a dollop of softened cream cheese and a sprig of mint.
