Fried Apples with Bacon

Category: Fruits

Serves 8

6 - 8 apples, peeled, cored, and sliced
(any variety will work, use according to whether you want sweet or tart. I've used either.)

4 slices thick-cup bacon

1/2 cup diced onion, I prefer Vidalia

Butter as needed for frying

Salt

In a large cast iron skillet, fry the bacon until browned; crisp or chewy according to taste. Then without draining, add the apple slices and onion. Salt lightly. Fry on medium heat until the onion and apple are tender and completely done. While cooking, add butter if the pan begins to cook dry. Serve warm as a side dish.
