Encheritos with Homemade Encherito Sauce

For 8
8 corn or flour tortillas
2 pounds cooked ground meat, seasoned lightly with garlic and cumin powder
2 cups refried beans
1 onion, chopped
2 cups enchilada sauce
1 – 1 1/2 cups grated cheese
1/2 cup sliced black olives
Preheat oven to 400. Fill tortillas with meat, beans, and onion. Roll. Place in pan. When all are finished then cover with sauce, cheese and olives. Bake for 20 minutes.

Encherito Sauce
1 can tomato paste (8 oz)
2 cups chicken broth or bullion
1 tsp onion powder
1 Tbsp chili powder
1/2 – 1 tsp garlic powder
1/2 tsp salt, add more if needed.
Blend well. Let set an hour or more to blend. Keeps about a week in the fridge if you have any leftovers. You won’t have any leftovers.
