Creamed Spinach

About 2 cups drained cooked spinach (you may use canned or defrosted frozen)
1 pound button mushrooms, sliced
1/2 cup diced onion
1 or 2 cloves garlic, minced
1/2 stick butter
8 ozs. cream cheese, at room temperature
1/2 cup cream or milk
About a Tablespoon flour or cornstarch
1 Tablespoon dried basil (optional)
Salt & Pepper as desired
Melt butter. In the butter, cook mushrooms, onions, and garlic until tender. Add spinach and seasonings; heat, stirring to blend. Add cream cheese and cream (or milk) and quickly stir in the flour or cornstarch. Let simmer just long enough to thicken slightly. Garnish with a sprinkle of grated Parmesan cheese and/or chopped black olives. This is a recipe for a side dish, but it also works great as a dip served with sliced French bread.
