Smoked Salmon and Asparagus Omlet

4oz Hard Smoked Salmon
3oz Crumbled Goat Cheese
10-12 Spears Asparagus
6 Large Eggs
1tsp.+ 1tbs. Olive Oil
Salt
Fresh Ground Black Pepper
2tbs. Milk

Pre-heat the boiler.

In a medium mixing bowl wisk together the eggs, milk, and salt and pepper to taste. I like the milk in there to make the eggs fluffy. Don't need it though.

Heat 1tsp. Olive oil in medium fry pan over med. heat. Cut the asparagus at an angle into 1in. pieces and sauteed until just al dente. Set asparagus aside.

Shred and pick through the Salmon removing any bones. Set aside.

Add part of the olive oil in a non stick fry pan and heat over medium. Add 1/3 of the egg and let sit evenly until the sides just come off the pan. Lift edges with a spatula and let the egg run under cooking as needed.

On half of the omlette sprinkle with goat cheese, add some asparagus, and smoked salmon.

Place under boiler for about 45s. to a minute. Pull out and fold the omlette over the filling side and serve!
