1 c. softened butter
1 1/2 c. sifted confectioners' sugar
1 tsp. vanilla
2 1/2 c. sifted flour
1/2 c. chopped nuts
1/2 c. (1/4 lb.) crushed pink peppermint stick candies
2 Tbsp. (1 oz.)cream cheese
1 Tbsp. milk
1 drop red food coloring
Cream butter. Gradually add 1/2 c. confectioners' sugar and vanilla. Cream well. Gradually add sifted flour and nuts. Mix thoroughly. Chill while preparing filling. For filling-Combine peppermint candy and 1/2 c. confectioners' sugar. Reserve. Blend together cream cheese and milk until smooth and cream. Add the remaining 1/2 c. confectioners' sugar, 3 Tbsp. of the reserved peppermint candy-sugar mixture and red food coloring. Mix well. Shape chilled dough into balls, using a rounded spoonful for each. Make a deep hole in center of each and fill with about 1/4 tsp. filling. Place on ungreased cookie sheets. Bake at 350 for 12-15 mintues until set but not brown. While warm, roll in remainder of peppermint candy-sugar mixture. When cool, reroll in candy mixture.
