Pasta With Spinach And Sausage

Ready in: 30-60 minutes
- 1 pound Italian sausage, casings removed
- 2 tablespoons olive oil
- 4 cloves garlic
- 1 medium onion, chopped
- 2 cans (14.5 ounce size) spicy diced tomatoes
- 1/8 teaspoon ground nutmeg
- 1 package (about 6 ounce size) fresh baby spinach
- 1 pound pasta, cooked, drained, kept warm
Cook sausage in a large skillet over medium heat for 5 to 7 minutes or until crumbled and no longer pink. Remove; keep warm. Wipe out pan; add oil. Cook garlic and onion about 3 minutes or until onion is tender. Stir in tomatoes and nutmeg; continue to cook about 10 minutes over medium heat. Add spinach and stir just until leaves have wilted. Toss tomato-vegetable mixture with sausage and pasta until well blended.
