Buffalo Chicken Meatballs

2 lbs ground chicken breast
1 avocado, smashed
1 1/2 cup quick cooking oats
3 egg whites, large
1/2 cup celery, diced (approx 3 stalks)
4 oz goat cheese (or blue cheese or cream cheese)
1 Tbsp Onion Powder
1 Tbsp Garlic Powder
1 tsp Dry Mustard Powder
8 Tbsp Buffalo Sauce
Directions:
Pre-head oven to 375
Spray muffin pan with non-stick spray
Combine all ingredients in a large bowl (except buffalo sauce)
Mix until well blended together.
Roll mixture into racquetball size balls an place into muffin pan.
This should fill approximately 20 muffin cups.
Bake for approxmiately 40 minutes.
Remove from oven, let cool for a few minutes, & toss in buffalo sauce.
These can be eaten immediately or refrigerated/frozen for meals at a later date. For added flavor, dip in Ranch or Blue Cheese dressing.
