Cheaters Mac and Cheese Bake

Ingredients:

1 large package of your favorite frozen macaroni and cheese
2 strips of bacon
1/4 cup milk
1/2 cup prepared bread crumbs
1/2 cup canned parmesean cheese
1/4 cup chopped chives


In a large skillet fry bacon until crispy. Set bacon aside.

Dump your frozen mac and cheese into skillet with bacon fat. Pour milk over and heat on medium low heat, covered until the mac is defrosted and the cheese sauce is nice and thick. Stir well.

Sprinkle the two strips of crispy bacon over the top. Then mix your bread crumbs and parmesean in seperate bowl and spread over the macaroni and cheese.

Place skillet under the broiler until the cheese and bread crumb mix is golden brown.

Garnish with fresh chopped chives.

Your family and friend will think you are a culinary god or goddess.

Suggested side dish (my favorite)

Sauteed brussel sprouts:

Thaw and slice in half one bag of frozen brussel sprouts.

In large sauce pan heat olive oil, enough to cover bottom of pan. Add two cloves of minced garlic stirring so garlic doesn't burn. Add sliced brussel sprouts and keep stirring until sprouts start to slightly brown. Remove from heat, sprinkle with papirika and serve along side your cheaters mac and cheese bake.

You can also prepare your favorite green vegetable the same way: blanched green beans, brocolli, sugar snap peas, asparagus...you choose whatever is fresh and suits you.

For dessert? Try some skillet fried apples.

Super easy.

6 peeled, cored and thinly sliced apples (granny smith, macintosh..any baking apple)
4 tablespoon butter
1/2 cup sugar
1 tablespoon freshly grated cinnamon stick
pinch of salt

In a large skillet melt butter and add the rest of the ingredients....cook over medium heat, stirring until apples are tender.

Serve with a scoop of vanilla ice cream or dollop of fresh whipped cream.

If you choose the whipped cream don't be lazy.

Place in your freezer 1 small carton of heavy whipping cream, the mixing bowl and the beaters of your mixer.

Just before serving...whip up the cream with a teaspoon of vanilla and 1/4 cup of powdered sugar.

Not hard and well worth the effort.

Cooking time...all three dishes? About an hour.

Enjoyment? A lifetime.
