Purses With Warm Goat Cheese

4 ounces unsalted butter
3 12 x 17 1/2 inch sheets frozen phyllo dough
4 ounces soft goat cheese
1 teaspoon chopped chives
1 teaspoon grated lemon zest

In a small saucepan over low heat, melt the butter. Lift off any butter solids that float to the surface. In a bowl, mix together the goat cheese, chives and lemon zest.

Working on a flat surface, brush a sheet of the phyllo dough with butter. Top with another sheet of phyllo and brush with butter. Add the last sheet of phyllo and brush with butter. These sheets will become your wrappings. Cut the phyllo into 20 squares measuring 3x3 inches. Place 2 teaspoons of the filling in the center of each square. Pull all the edges up and pinch to form a purse. Place the purses on a baking sheet lined with parchment paper or sprayed with nonstick coating. Refrigerate up to 4 hours or freeze for up to two weeks.

To serve, preheat oven to 400 degrees. Place frozen or refrigerated purses in oven and bake about 8 minutes if refrigerated or 15 minutes if frozen. Do not thaw purses if frozen. Serve warm.
Yields 6 to 12 servings.
