Sausage-Cheddar Grits Casserole

1 pound hot bulk sausage
1/2 cup chopped onion
1 cup quick cooking grits
8 ounces sharp cheddar cheese, shredded
2 eggs, beaten
1/2 teaspoon salt Pepper to taste
1/4 cup shredded sharp Cheddar cheese

Brown the sausage with the onion in a skillet, stirring until crumbly, drain well on paper towels. Cook the grits using the package direction.

Combine the sausage mixture, grits, 8 ounces cheese, eggs, salt and pepper in a bowl and mix well. Pour into a buttered 9 by 13 inch baking dish. Top with 1/4 cup cheese. Bake at 350 degrees for 1 hour.
Serves 8.
