Cheese Quesadillas With Spicy Tomato Salsa

12 flour tortillas
Monterey Jack cheese or cheddar
canola or peanut oil

Spicy Tomato Salsa:
2 cups seeded and diced tomatoes
2 tablespoon diced red onion
chili powder to taste
1 teaspoon salt Juice of one lime
2 tablespoon chopped coriander
1 teaspoon cumin powder

Preheat the oven to 375 degrees. Lay 6 tortillas on a baking tray and cover with shredded cheese, as much as you like.

Cover each tortilla top, paint using a brush with a thin coat of oil, and bake for 10 to 12 minutes until the tops are lightly browned and crisp.
Make spicy tomato salsa, mix all of the stuff together in a bowl and let stand for five minutes.

Cut each tortilla into quarters and serve with a bowl of the salsa on the side.
Serves 4.
