Mexican Torta Sandwiches

3/4 pound chorizo sausage
1/2 cup thick and chunky salsa
15 ounce can black or pinto beans, rinsed and drained
8 French rolls, 3 1/2 by 2 1/2 inches or bratwurst buns, cut in half lengthwise
1/3 cup sour cream
1/2 cup cheddar or Monterey Jack cheese, shredded
1 cup shredded lettuce

In a 10 inch skillet, cook sausage over medium heat, stirring occasionally, until browned about 8 to 10 minutes, drain off fat. Stir in salsa and beans. Continue cooking, stirring occasionally, until heated through about 2 to 3 minutes.

Meanwhile, pull out doughy centers from top and bottom halves of rolls, leaving a cavity almost the full length of the roll. Spread about 1 teaspoon sour cream on both halves. Fill bottom half of each roll with about 1/3 cup meat mixture, 1 tablespoon cheese and 2 tablespoons lettuce and top with top half of roll. Cut each sandwich in half diagonally.
Serves 8.
