Broiled Shrimp Basque Style

1/2 cup lemon or lime juice
1/2 cup fresh herbs
liquid red pepper sauce
1 tbsp. fresh garlic
1/3 cup + 2 tbsps. extra virgin olive oil
salt and pepper
1 1/2 lbs. large shrimp

Heat broiler or prepare grill for direct-heat cooking. In bowl, combine lemon or lime juice, pepper sauce, 1/3 cup olive oil, coarsely chopped herbs or 1/4 cup dry herbs, any combination of parsley, thyme, basil and marjoram.

Toss shrimp, peeled and deveined with remaining 2 tablespoons oil to coat well.

Place under hot broiler or on grill, as close to heat as possible, cook for about 2 minutes then turn shrimp and cook until pink, about 2 minutes. Add hot shrimp to herb mixture, toss gently and serve at
once.
Serves 4.
