Roast Fish in Moroccan Marinade
1 small yellow onion, grated
1/4 cup chopped fresh flat-leaf Italian parsley
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh mint
1 tablespoon minced garlic
1 tablespoon ground cumin
1/2 teaspoon cayenne pepper
1/3 cup extra virgin olive oil
1/4 cup lemon juice
4 firm white fish fillets such as cod, snapper, flounder, swordfish
or sea bass, about 6 ounces each
salt and ground black pepper to taste
In large bowl, whisk together onion, parsley, cilantro, mint, garlic, cumin, cayenne pepper, olive oil and lemon juice to form a marinade.
One at a time, dip fish fillets in marinade, coating well. Place in non-aluminum container. Cover and refrigerate 2 to 4 hours.
Preheat oven to 450 degrees. Transfer fish to baking dish. Sprinkle with salt and black pepper. Cover with marinade. Roast until fish is opaque throughout, 10 to 15 minutes. The timing will depend upon thickness of fillets.
Transfer to warmed plates and serve immediately. Serve with couscous.
