Apple Cider-Glazed Carrots

1 1 pound bag peeled baby carrots
2 1/2 cups apple cider
1 tablespoon finely grated orange zest
salt and freshly ground black pepper
2 tablespoons unsalted butter
1 tablespoon sugar
1 tablespoon red wine vinegar
1 tablespoon finely chopped fresh mint
2 teaspoons finely chopped flat-leaf parsley

In a medium saucepan, place carrots, 2 cups cider, 2 cups water, orange zest, 1 teaspoon salt and a few grindings of pepper. Cover pan and bring to boil over high heat. Reduce heat to medium and cook until carrots are almost tender, 8 to 10 minutes. Drain well and discard liquid.

In medium skillet, melt butter over high heat. Add remaining 1/2 cup cider, sugar, red wine vinegar and carrots. Boil, stirring almost constantly, until liquid is reduced to a syrupy glaze. Add mint and parsley, then salt and pepper to taste. Stir well and serve.
Serves 4.
