Caribbean Country-Style Ribs-Jamaica

3 lbs. pork loin country-style ribs
1 1/2 tsp. chili powder
1/2 cup mango chutney
3/4 tsp. ground cumin
4 tsps. hot sauce
1/2 tsp. salt
1 tbsp. vegetable oil
1/2 tsp. dried thyme

In 5 quart saucepan over high heat, heat ribs with enough water to cover to boiling. Reduce heat to low; cover and simmer 1 hour or until ribs are fork-tender. Drain.

Heat grill to medium or heat oven to 450 degrees. Meanwhile, in medium bowl, combine chopped chutney, pepper sauce, oil, chili powder, cumin, salt and thyme. Arrange ribs on rack in grill or broiler pan.

Brush ribs with chutney mixture. Cook 20 minutes or until brown and heated through, brushing occasionally with chutney mixture and turning once.
Serves 4.
