Old Time Corn Cakes

4 medium ears corn, husks and silks removed
1 large egg
1/4 cup flour
1/4 cup grated parmesan cheese
1 tablespoon snipped fresh chives
1/2 teaspoon salt
ground black pepper
1 tablespoon butter

Over large bowl, grate corn on large holes of box grater until cobs are clean and discard cobs. Stir in egg, flour, cheese, chives, salt and pepper to taste until batter is smooth.

Melt butter in a large nonstick skillet. Take 1/4 cup of batter and scrape it, the batter will be thick, into pan to form a round cake.

Repeat, using all the batter and you should get 6 cakes. Cook over medium heat, turning once, until griddle cakes turn a rich golden brown on both sides, about 9 minutes total. Serve immediately.
Serves 4 to 6.
