Potato, Broccoli and Cheese Frittata

1/2 teaspoon oil
1 1/2 cups egg substitute
1 tablespoon minced fresh basil or 1/2 teaspoon dried
1/2 teaspoon soy sauce
2 cooked red potatoes, diced
1 green onion, minced
1 cup cooked broccoli florets
1/4 cup sliced pimiento
1/3 cup grated cheddar cheese
freshly ground pepper

Heat broiler. Heat oil in large non-stick skillet over medium heat. Whisk together egg substitute, basil and soy sauce. Add to pan and cook, gently pushing outer edges toward center with spatula until eggs are about half set.

Sprinkle top with potatoes, green onion, broccoli and pimiento.

Place pan under broiler, 5 to 6 inches from heat and broil 2 to 3 minutes. Remove from oven, sprinkle with cheese. Broil until cheese melts, about 2 minutes. Sprinkle with pepper to taste.
Serves 4.
