Parmesan Chicken Baked Pasta

1 tsp. olive oil
1 lb. Italian-style poultry sausage, removed from casings
3 cups prepared marinara sauce
1/2 cup red wine
1 6 oz. can ripe olives, halved
3/4 cup low fat ricotta cheese
1 lb. pkg. whole grain penne pasta, cooked
1 cup shredded Italian cheese blend
1 tsp. chopped oregano

Heat olive oil in a large saute pan over medium high heat. Stir in sausage and cook for 5 to 6 minutes until browned and cooked through.

Pour in marinara sauce and red wine and bring to a boil. Turn heat down to simmer and cook for 4 to 5 minutes. Remove from heat and stir in 1 cup ripe olives and ricotta cheese.

Toss with pasta and pour into a 3 quart casserole dish. Top with cheese and sprinkle with oregano and remaining olives.

Bake in a 400 degree oven for 20 minutes until golden brown and heated through.
Serves 8.
