Broiled Pepper and Chevre Spread

1 tablespoon extra-virgin olive oil
pinch ground red pepper
7 to 12 ounces French-style goat cheese
freshly ground pepper

Heat broiler. Combine oil and ground red pepper in small bowl. Combine cheese and half of the oil mixture in separate bowl, stirring until smooth.

Line small bowl with plastic wrap. Press cheese into bottom of bowl to form dome. Turn cheese onto an oven-proof baking dish; remove plastic wrap. Brush on remaining oil mixture. Top with pepper.

Broil as far away from heat source as possible, until warm throughout
with golden crust, about 5 minutes. Do not burn. Serve immediately with crusty bread.
Serves 6 to 8.
