Penne With Zucchini and Feta

8 ounces uncooked penne
1 tablespoon olive oil
1/2 teaspoon dried oregano
2 medium zucchini, halved lengthwise and sliced
2 garlic cloves, peeled, crushed
3/4 cup chicken broth
1/2 teaspoon grated lemon rind
1/2 tablespoon fresh lemon juice
1/4 teaspoon black pepper
2/3 cup crumbled feta cheese

Cook the pasta according to the package directions, omitting salt or fat.

While the pasta cooks, heat the oil in a large skillet over medium-high heat. Add the oregano, zucchini and crushed garlic and saute 3 minutes.

Stir in the broth, rind, juice and pepper. Add the pasta and cheese and toss well. Serve immediately.
Yields 4 servings.
