Breaded Red Tomato Slices

2 beaten eggs
1 tbsp. milk
4 firm medium red tomatoes
1 cup fine dry seasoned breadcrumbs
2 to 3 tbsps. oil
1/2 cup shredded cheese

In shallow bowl, mix eggs and milk andcut tomatoes into 3/4 inch thick slices and dip tomato slices in bread crumbs, then in egg mixture and dip again in crumbs.

In skillet, cook tomatoes in hot oil over medium heat turning to brown both sides.

Sprinkle cheese over tomatoes. Cover and cook over low heat until cheese is almost melted.
Serves 4 to 6.
