Spiced Roast Chicken

2 3/4 lb. frying chicken
1 tbsp. vegetable oil

For spice rub combine:
1/4 tsp. cayenne pepper
1/4 tsp. ground clove
1/2 tsp. cinnamon
1/2 tsp. ground ginger
1 tsp. black pepper
1/2 tsp. salt
1/2 tsp. dried thyme leaves

For basting sauce combine:
juice of 1 lime
1 tbsp. brown sugar
2 ozs. rum

Preheat oven to 325 degrees. Brush chicken with oil, and then rub with spice mixture. Roast chicken, basting with sauce every 20 minutes, for 90 minutes, or until chicken's temperature in the deepest part of the thigh registers 170 degrees on a meat thermometer.

Rest chicken 10 minutes before carving.
Yields 4 servings.
