Italy-Pollo Oliva-Farcito

4, 6 ounce boneless, skinless, chicken breast halves
4 ounces cream cheese
1 2 1/4 ounces sliced ripe olives, drained
1/8 teaspoon dried oregano
1/8 teaspoon pepper
1/2 cup seasoned bread crumbs
1 tablespoon olive oil

Flatten chicken to 1/4 inch thickness. In a small bowl, combine the cream cheese, olives, oregano and pepper. Spoon 2 tablespoons down the center of each chicken breast. Fold chicken over filling and secure with toothpicks, then roll in bread crumbs.

In a large oven-proof skillet, brown chicken in oil. Bake at 350 degrees for 20 to 25 minutes or until juices run clear. Discard toothpicks.
Serves 4.
