Tomato Lime Ice

Tomato Lime Ice

2 medium tomatoes, peeled, seeded and diced
1 1/2 cups water
1/2 cup sugar
1 teaspoon salt
3 sprigs thyme
1/4 cup lime juice

Puree tomatoes in blender to make about 1 cup pulp. Combine water, sugar, salt and thyme in a heavy saucepan. Bring to a boil and cook, stirring occasionally, until clear syrup is formed, about 2 minutes. Remove from heat and discard thyme.

Stir in tomato puree and lime juice. Pour into round metal cake pan and freeze about 45 minutes. Remove and, with a spoon, stir and break up ice crystals. Return to freezer and stir every 15 minutes until a granular slush forms. Serve in glass cups or store in plastic container in freezer.
Makes 4 to 6 servings.
