Chunky Chicken Guacamole

- 8 ounces boneless skinless chicken breast
- salt and pepper, to taste
- 1/2 cup ripe avocado
- 1 plum tomato, seeded and diced
- 1 tablespoon diced roasted red pepper
- 1/4 teaspoon dried oregano
- 1/4 teaspoon ground cumin
- 1 tablespoon chopped fresh cilantro
- 1/4 teaspoon grated lime zest
- 1 tablespoon fresh lime juice
- 1/8 teaspoon chile paste or hot sauce
Preheat the oven to 350 degrees F. Season the chicken with salt and pepper and place in a baking dish. Cover tightly with foil and place in the oven. Bake at 350 degrees F for 35 minutes or until the chicken is cooked through. Remove the chicken from the oven and let cool completely. Cut into 1/4-inch cubes or shred it with two forks. Peel and cube the avocado and place in a bowl with the chicken, tomato, roasted red pepper, oregano, cumin, cilantro, lime zest, lime juice, and chile paste. Mix gently, you want some avocado chunks to remain. Adjust the seasoning with salt and pepper as needed. Serve with tortilla chips or pita wedges.
