St. Elmo`s Shrimp Cocktail

- 2 tablespoons coarsely grated fresh horseradish
- 1/2 cup cider vinegar
- 2 cups chili sauce
- 1 tablespoon fresh lemon juice
- 2 tablespoons fresh lime juice
- 16 cooked jumbo shrimp, chilled, peeled, deveined, tails on
- 4 lemon wedges
Combine the horseradish and vinegar in a non-reactive container with a tight-fitting cover. Mix well, then refrigerate it overnight. The next day, drain the vinegar from the horseradish. Combine the horseradish, chili sauce, lemon juice, and lime juice. Mix well. Place 1/2 cup of the sauce in individual bowls or martini glasses. Add 4 shrimp and a lemon wedge to each bowl. Serve the shrimp cocktail immediately.
