Light Cream Substitute

- 3/4 cup milk
- 3 tablespoons butter or margarine
Melt the butter and let cool to room temperature. If it is still warm the mixture will separate. Place the melted butter and milk in a bowl and whisk or beat until completely combined. Store the mixture in a covered container in the refrigerator for up to 2 days. The mixture may separate and will need to be remixed. Use in place of light cream in recipes. This recipe works well in recipes like soups and sauces.
