  • 1 1/2 pound bulk pork sausage
  • 1 red or green bell pepper, chopped
  • 1 medium onion, chopped
  • 3 cups frozen hash brown potatoes
  • 2 cups shredded Cheddar cheese
  • 1 cup Bisquick baking mix
  • 2 cups milk
  • 1/4 teaspoon black pepper
  • 4 eggs, lightly beaten

Preheat the oven to 400 degrees F. Grease a 9x13-inch baking dish.

Combine the sausage, bell pepper, and onion in a non-stick skillet over medium heat. Cook, stirring occasionally, breaking up the sausage and cooking until it is no longer pink. Drain off any excess grease. Transfer the sausage mixture to a large bowl.

Add the hash browns and 1 1/2 cups of the Cheddar cheese to the bowl and mix well. Add the baking mix, milk, black pepper, and eggs. Stir until completely mixed.

Pour the mixture into the greased baking dish. Place the dish in the oven and bake at 400 degrees F for 40-45 minutes or until a knife inserted in the center comes out clean.

Top the breakfast pie with the remaining cheese and bake for 1-2 minutes longer or until the cheese has melted.

Remove the dish from the oven and let cool for 5 minutes on a wire rack. Cut into serving pieces and serve hot.
