100 Good Cookies

- 1 cup sugar
- 1 cup brown sugar
- 1 cup salted butter, softened
- 1 cup oil
- 1 egg
- 1 teaspoon vanilla extract
- 3 1/2 cups all-purpose flour
- 1 teaspoon cream of tartar
- 1 teaspoon baking soda
- 1 cup Rice Krispies cereal
- 1 cup flaked coconut
- 1 cup raw oatmeal
- 1 cup chopped nuts
Preheat the oven to 350 degrees F. Combine the sugar, brown sugar, and butter in a mixing bowl. Beat on medium speed with an electric mixer until creamed. Add the oil, egg, and vanilla extract and mix for 1 minute. Combine the flour, cream of tartar, and baking soda in another bowl. Mix well. With the mixer running, slowly add the flour in 1/2 cup increments until incorporated. Stir the cereal, coconut, oatmeal, and nuts into the dough by hand. Drop the cookie dough by teaspoons onto baking sheets. Press down lightly with a fork to flatten them. Place the baking sheets in the oven and bake at 350 degrees F for 12-15 minutes or until done. Remove the baking sheets from the oven and let the cookies cool for 2-3 minutes then transfer them to cooling racks. Store the cooled cookies in an airtight container.
