Makes 4 dozen
1 1/4 cup butter
3 1/2 cup flour
2 cup sugar
1 1/2 tsp cinnamon
1 egg
1 egg yolk
Cut butter into mixture of dry ingredients in bowl. Beat egg and egg yolk in a small bowl Add to crumb mixture; mix well. Knead lightly on floured surface. Chill for several hours.
Roll a small portion at a time to desired thickness on lightly floured surface. Cut as desired. Place on un-greased cookie sheet. Sprinkle with additional sugar or tinted sugar. Bake at 350 F for 8-10 minutes or until light brown. Cool on wire rack.
