English Apple Crumble

- 6 medium tart apples (ie: Granny Smith, Rhode Island Greening)
- 1/3 cup sugar, PLUS
- 1/4 cup sugar
- 1/2 lemon, juiced
- 1 teaspoon ground cinnamon
- 3/4 cup all-purpose flour
- 4 tablespoons butter
- Additional sugar for sprinkling (optional)
Preheat oven to 400 degrees F and grease a 2-quart baking dish. Peel, core, and cut the apples into 1/2-inch slices. Place in a saucepan with 1/3 cup of the sugar, lemon juice, and cinnamon. Cook over low heat, stirring once or twice, for 10 minutes, or until the apple slices are tender but not falling apart. Spoon into the baking dish. Combine the flour and the remaining 1/4 cup sugar in a small bowl. Cut in the butter with a pastry blender or two knives until the mixture is crumbly. Sprinkle on top of the apples. (I like to sprinkle the crumbs with 2 teaspoons sugar.) Bake for 30 minutes, or until golden brown.
