  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 1 cup raw peanuts
  • 1/8 teaspoon salt
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda

Butter a rimmed baking sheet.

Combine the sugar, corn syrup, peanuts, and salt in a 2-quart size microwave-safe mixing bowl. Place in microwave and cook on high for 8 minutes, stirring halfway through the cooking time.

Stir the butter into the mixture and microwave on high for 2 more minutes or until the mixture just begins to brown.

Remove the bowl from the microwave and stir in the vanilla extract and baking soda until the mixture is light and foamy.

Spread the brittle on the baking sheet as thin as possible. Let cool then break into pieces.

Cook's Notes: Microwaves cook at different wattages. Adjust cooking time as needed based on your make and model.
