Crackle-Top Molasses Cookies

- 2/3 cup vegetable oil
- 1 cup granulated sugar
- 1 egg
- 1/4 cup molasses
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- additional granulated sugar for rolling
Preheat oven to 350 degrees F. In a large bowl, combine oil and sugar. Add egg and beat well. Stir in molasses, flour, baking soda, cinnamon and ginger. If necessary, add more flour to make a firm dough. Shape into 1-inch balls, roll in granulated sugar. Flatten slightly using the palm of your hand. Place 3 inches apart on ungreased baking sheets. Bake for 12-14 minutes or until golden brown and crackly on top. Remove cookies to wire racks to cool.
