Butter Biscuits

- 1/3 cup butter, chilled
- 2 1/2 cups biscuit baking mix, plus more for the work surface
- 2/3 cup milk
- melted butter, as needed
Heat oven to 450 degrees F. Cut the chilled butter into 1/4-inch cubes. Add the baking mix and butter to a bowl and toss well with a fork to combine. Add the milk and stir with the fork just until the milk is absorbed - do not over mix. Dust a workspace with additional baking mix. Turn the dough out onto the surface and knead 5 times. Pat to 1/2-inch thickness. Cut the dough with a 3-inch biscuit cutter. Gather any scraps, reroll, and recut. Place the biscuits 2-inches apart on an ungreased cookie sheet. Bake at 450 degrees F for 9 minutes or until golden brown. Brush with melted butter immediately when they are done.
