Baked Chicken and Mushrooms

- 4 tablespoons butter, melted
- 1/4 teaspoon garlic salt
- black pepper, to taste
- 1/4 cup chopped celery
- 6 boneless skinless chicken breast halves
- 1/2 pound fresh mushrooms, sliced
- 1/2 cup shredded Monterey jack cheese
- 2 3/4 ounces french fried onions
Preheat the oven to 350 degrees F. Combine the melted butter, garlic salt, black pepper, and chopped celery in a large baking dish. Add the chicken breasts and turn them to coat completely in the butter. Cover the baking dish with foil and bake at 350 degrees F for 1 hour. Remove the foil and evenly sprinkle the sliced onions around the chicken. Replace the foil and bake the chicken for 15 minutes more or until the chicken is almost cooked through. Remove the foil again and top the chicken with the cheese and french fried onions. Bake for 5-7 minutes longer, uncovered, or until the cheese is melted. Serve hot.
