Tuscany Spagetti Sauce
(small batch)
1 can (large) Hunt's Tomato Sauce
1 can (large) Contidena Tomato Puree
1 can (small) Hunt's Tomato Paste
2 1/2 Tbls Sweet Basil
1 teasp oregano
1 bay leaf
1 teasp onion salt
1 teasp garlic salt
1 - 2 Tbls sugar (to taste- start w/ less & go from there, my girls tend to like it a bit sweeter)
strong coffee ( about 1/4 to 1/3 cup)
~ a bit of good red wine doesn't hurt, but isn't necessary
In a hot pan, fry tomato PASTE in a large saucepan over med. heat (approx. 5 - 10 minutes), stirring constantly (carefull not to burn)
Add tomato SAUCE and Tomato PUREE - stir very well, scraping sides and bottom well to incorporate the cooked paste.
Add spices, bay leaf and sugar. Add coffee (if using)
Cover and cook over medium-low heat, stirring often, but NOT scrapping sides or bottom (the bitterness settles there)
1 hour in-to cook time add meats.
Slow simmer for approx 3 - 4 hours ...
Taste and adjust seasonings about 2 hours into cook time.
** NOTE: Remove Bay leaf prior to serving
