4 beef chuck blake or chuck eye steaks, about 3/4 inch thick
2-4 clove garlic, minced
Salt and pepper, to taste
2 tbsp olive oil
1 (6 oz) pkg fresh baby spinach
1/2 tsp dried rosemary leaves, crushed
1 cup shredded Asiago cheese, divided
Combine garlic, salt and pepper; press evenly onto steaks. Heat 1 tbsp oil in a skillet over medium heat until hot. Place steaks in skillet; cook blade steaks 10-12 minutes and chuck eye steaks 9-11 minutes , turning once during that time. Remove and keep warm.
Heat remaining 1 tbsp oil in same skillet. Add spinach and seasonings. Cook and stir 1-2 minutes or until spinach is wilted. Remove from heat. Add 3/4 cup cheese to spinach; toss. Serve steaks on spinach. Sprinkle with remaining cheese.
